Of all the different elements of Japanese cuisine, the one that is most popular with American audiences is sushi, with many sushi recipes combining rice and fish. However, when many people try to prepare these dishes at home, it can turn into a disaster, mainly because of the specific sushi rice that is needed to create the delicacy. Different from ordinary types of rice, this rice is made with a specific dressing that allows it to stick together and form the rolls and forms that are common in the Japanese cuisine. Various types of sushi may require slightly different preparations of the rice.The main type of sushi rice that is used in sushi recipes is called shari and consists of cooked rice that is allowed to cool and then mixed with a dressing. The dressing is made from salt, sugar, rice vinegar, and may include an additional flavoring component, such as sake or kombu. In different regions of Japan, there can be some differences between the dressing. AN example would be the Kansai region, which uses more sugar than other Japanese locations. The actual rice is meant to be a short grain variety from Japan although other short grain varieties may work as well if prepared correctly.
For traditional sushi rice, a hangiri should be used to mix the rice with the dressing. This hangiri is a wooden barrel or tub that has a flat bottom and the mixing is done with a paddle that is called a shamoji. Before making the sushi recipes, the rice will need to cool enough so that it will stick together when forming the specific sashimi shapes or sushi rolls. First attempts at making sushi can turn out badly and many home sushi cooks realize that it can take many years to master the art form.
